Ingredients
- Eggplant : 1
- Tomato : 1
- Cheddar (Slices) : 4
- Crème fraîche 40% (Heavy) : 4 tablespoons
- Mustard : 1 teaspoon
- White ham (Slice) : 1
- Gruyere (Grated) : 30 grams
- Salt : 1 pinch
- Pepper : 1 pinch
Preparation steps

Rinse the eggplant and cut into 8 slices of equal thickness.
Be careful not to make the slices too thick, as they may barely cook when cooked. -
Rinse the tomatoes and cut into 4 thick slices.

In a ramekin, mix the crème fraîche with the mustard.
Season with salt and pepper. -
Now proceed to assemble the croques-monsieur.
Place the eggplant slices on a sheet of baking paper or silicone baking mat.
Spread a first layer of cream over 4 slices. -
Then place a slice of Cheddar cheese on top.

Add a slice of tomato.

Cut the ham into 4 and place the slices on top of the tomatoes.
Finally, place the last 4 slices of eggplant on top of the ham. -
Finish by spreading the remaining cream on each remaining slice of eggplant, then sprinkle with a pinch of Gruyère cheese.
Place in the oven for 20 minutes at 180 degrees. - Temperature: 20°C
