Ingredients
- Puff pastry : 1
- White cabbage : 200 grams
- Carrots : 100 grams
- Onion : 1
- Eggs : 3
- Honey : 2 teaspoons
- Liquid soy cream : 50 milliliters
- Gruyere : 40 grams
- Olive oil drizzle : 1
- Salt : 1 pinch
- Pepper : 1 pinch
Preparation steps
Onion stew

Make the onion stew that will line the base of the quiche.
Peel and slice the onion (approx. 120 g).
In a frying pan, add a drizzle of olive oil and sauté the onion over low heat. -
When translucent, add the two teaspoons of honey. Sauté until the onion caramelizes.
Set aside.
Preparing the other vegetables

Cut the white cabbage into small pieces and peel the carrot.
Count 200 grams of cabbage and 100 grams of carrot.
Using a vegetable peeler, cut carrots lengthwise into thin strips.
In a stewpot or large frying pan, drizzle with olive oil and cook the cabbage and carrot strips. Don't hesitate to cover.
Vegetables are ready when barely crisp.
Season with salt and pepper.
Set aside.
Quiche filling

To prepare the quiche mixture, place the eggs in a bowl.

Add cream, salt and pepper.
Mix well with a whisk.
Finalizing the quiche

Roll out and prick the pastry in a 28-centimeter-diameter tart tin.
Place onion stew. -
Then the cabbage/carrot mixture.

Pour in the quiche mixture and add the grated Gruyere.
Finally, fold the pastry over to form a rim.
Bake at 180 degrees for 25 minutes. - Temperature: 180°C
