Ingredients
- Eggplant : 1
- Small green zucchini : 1
- Small yellow zucchini : 1
- Red bell pepper : 1
- Yellow Bell Pepper : 1
- Onion : 1
- Tomatoes : 2
- Gousses d'ail : 2
- Olive oil : 3 tablespoons
- Thyme (sprig) : 1
- Bay leave : 1
- Rosemary (sprig) : 1
- Fresh basil (Chopped) : 1 tablespoon
- Salt : 1 pinch
- Pepper : 1 pinch
Preparation steps

Cut all the vegetables (eggplant, zucchini, bell peppers, onion, and tomatoes) into similar-sized pieces or cubes.
Place all the chopped vegetables into a large oven-safe dish (like a baking dish).
Add minced garlic, a bay leaf, thyme, salt, pepper, and drizzle with olive oil.
Mix well to coat all the vegetables. -
Cover the dish with aluminum foil and bake for 30 minutes.
After 30 minutes, remove the foil and continue baking for another 20 minutes, or until the vegetables are tender and slightly caramelized.
Just before serving, sprinkle with freshly chopped basil. - Temperature: 180°C
