Ingredients
- Unsalted butter : 50 grams
- Onion : 1
- Garlic Cloves : 2
- Leek (200 gr.) : 1
- Broccoli (300 gr.) : 1
- Carrots (300 gr.) : 4
- Russet Potatoes : 2
- Light blonde beer : 250 milliliters
- Water : 500 milliliters
- Chicken broth : 500 milliliters
- Bay Leaves : 2
- Salt : 2 pinches
- Pepper : 2 pinches
Preparation steps
-
Finely slice the onions and mince the garlic. In a large pot, melt the butter over medium heat.
Add the onions and garlic, then sauté for about 5 minutes, stirring regularly, until they become translucent and lightly golden. -
Cut all the vegetables into uniform-sized pieces to ensure even cooking.
Add the vegetables to the pot with the onions and garlic. Sauté everything over high heat for 5 minutes, stirring frequently to coat the vegetables well in the butter. -
Pour the beer into the pot and cook over high heat for an additional 5 minutes, stirring occasionally to allow the alcohol to evaporate and the beer to slightly reduce.
-
Add the water and chicken broth to the pot.
Season with salt and pepper.
Bring to a boil, then reduce the heat to medium.
Simmer uncovered for about 20 minutes, or until the vegetables are tender. -
Remove the pot from the heat and use an immersion blender to blend the soup until smooth and creamy.
Taste and adjust seasoning if needed before serving.
