Ingredients
- Green lentils : 670 grams
- Bacon : 240 grams
- Carrots : 4
- Onions : 2
- Celery (Branches) : 2
- Garlic Cloves : 4
- Herbs of Provence : 3 teaspoons
- Chicken broth : 750 milliliters
- Dry white wine : 40 centiliters
- Pepper : 2 pinches
- Salt : 2 pinches
Preparation steps

Cut the carrots into small rounds or cubes.

Cut the celery stalks into cubes as well.

Chop the onions and mince the garlic.

Cut the smoked bacon into strips and then into small squares.
Heat the pot over medium heat without adding any fat.
Add the bacon and cook until it becomes golden brown (about 10 minutes). -
Add the pre-cut vegetables.
Season lightly with salt and pepper (the broth will add extra salt). Add the herbes de Provence. -
Let the vegetables sweat, stirring regularly for about 10 minutes.

Add the lentils and stir well for 2 minutes.

Deglaze with 20 centiliters of white wine.
Let it reduce for about 5 minutes.
Cover the lentil-vegetable mixture with broth, about halfway up the mixture.
Let it cook for 15-20 minutes, stirring and checking regularly.
Add the rest of the broth.
Continue to watch and stir for another 15-20 minutes until the liquid has fully evaporated.
