Ingredients
- Potatoes : 1 kilogram
- Frying oil : 3 liters
- Salt : To taste
Preparation steps

Preheat oil to 150 degrees Celsius.
Start by peeling the potatoes, reserving them in a bowl of water, then cutting them up with a potato French fry cutter.
Dry the fries and set aside.
Blanch 1/3 of the fries in oil for 6 to 8 minutes.
Remove from oil and set aside on paper towels.
Repeat the operation with the remaining 2/3. -
Once all the fries have been blanched, raise the oil temperature to 180 degrees Celsius.
Brown 1/3 of the blanched fries in the oil for 5 to 6 minutes, or until golden brown (repeat for the remaining 2/3).
Pour into a paper-towel-covered container and season with salt.
They are now ready to serve.
