Ingredients
- Kabocha squash : 1.2 kilograms
- Shallots : 2
- Curry Powder : 1 teaspoon
- Maple syrup : 1 tablespoon
- Unsalted butter : 25 grams
- Fresh ginger (Grated) : 1 teaspoon
- Gousses d'ail : 2
- Vegetable stock : 1 liter
- Salt : 1 pinch
- Pepper : 1 pinch
- Whipping cream 30% : To taste
Preparation steps

Dice the squash and set aside.

Bring the butter to the boil in a Dutch oven and add the shallot, minced garlic and grated ginger. Sauté until the shallot begins to color.
Add maple syrup and caramelize. -
Add the diced squash and curry powder.
Season with salt and pepper.
Fry for 2 to 3 minutes. -
Add the vegetable stock and simmer for 20 minutes.

Reduce with an immersion blender until you obtain a smooth velouté.
