Note
It’s very important to use a neutral black tea such as Assam, Ceylon or English Breakfast. This recipe can also be prepared with the milk of your choice (soy, almond or cow’s milk). We chose oat milk for its neutrality and added coconut milk for its texture.
Tip
Chai tea can be kept in the fridge for 5 or 6 days and reheated in a cup each morning, or enjoyed iced.

Ingredients
- Orange (Zest) : 1/2
- Fresh ginger : 20 grams
- Cinnamon (Sticks) : 2
- Star anise or badian : 1
- Clove (Full) : 1
- Anise seeds : 1 teaspoon
- Black Pepper (Full) : 1 teaspoon
- Cardamom (Pods) : 10
- Vanilla bean : 1/4
- Black tea : 2 tablespoons
- Water : 2 liters
- Oat milk : 500 milliliters
- Coconut milk : 250 milliliters
- Cane sugar : 100 grams
- Unsweetened cocoa powder : 2 tablespoons
Preparation steps

Peel the ginger and cut into two pieces.
Using a vegetable peeler, cut off large pieces of orange zest.
Cut the vanilla pod to save a quarter. -
Place all the spices, tea and water in a saucepan.
Bring to the boil. -
Once the mixture has come to the boil, add the oat milk, coconut milk and sugar.
Heat until hot, without boiling, whisking occasionally.
Add cocoa and turn off heat.
Strain the mixture through a sieve or fine-mesh strainer and serve.
