Ingredients
- Unsalted butter : 120 grams
- Flour : 120 grams
- Eggs : 2
- Caster sugar : 100 grams
- Honey : 1 tablespoon
- Baking powder : 1 teaspoon
- Yellow lemon : 1
- Matcha Tea : 1 teaspoon
- Salt : 1 pinch
Preparation steps

In a bowl, whisk the eggs with the sugar until the mixture is pale and frothy.
Add the honey, lemon zest, and juice. Mix well. -
Sift the flour, baking powder, salt, and matcha powder together. Gently fold this dry mixture into the eggs, stirring carefully.
Add the warm melted butter and mix until the batter is smooth.
Cover the batter and refrigerate for 2 hours (this helps achieve the characteristic hump of madeleines). -
Preheat the oven to 200°C (390°F).
Lightly butter the madeleine molds if needed.
Fill each mold cavity two-thirds full with the batter.
Bake for 5 minutes at 200°C, then reduce the temperature to 180°C (356°F) and bake for an additional 5 to 7 minutes, until the madeleines are golden brown.
