Ingredients
To make scones
- Flour : 270 grams
- Almond powder : 50 grams
- Unstalted pistachios (Crushed) : 50 grams
- Caster sugar : 50 grams
- Baking powder (1 sachet) : 11 grams
- Salt : 1/4 teaspoon
- Unsalted butter (Cold) : 80 grams
- Egg : 1
- Milk : 150 milliliters
- Rose Water : 1 tablespoon
- Extrait de vanille : 1 teaspoon
For the garnish
- Unstalted pistachios (Crushed) : 2 tablespoons
- Dried rose petals : 3 tablespoons

In a large bowl, mix the flour, almond flour, crushed pistachios, sugar, baking powder, and salt.

Add the cold butter cut into small pieces into the dry mixture. Work the butter into the mixture with your fingertips until you get a sandy texture, with small visible chunks of butter remaining.

In a separate bowl, beat the egg with the milk, rose water, and vanilla extract.

Pour the liquid mixture into the dry ingredients.
Gently mix until the dough starts to come together.
Avoid over-mixing to ensure the scones stay light and fluffy.
The dough should be pliable but still slightly sticky. -
Using a tablespoon, form the scones on a baking sheet lined with parchment paper.
The dough should be about 1 to 2 cm high for each scone. -
Sprinkle the scones with crushed pistachios and dried rose petals for an elegant touch.
Bake in the preheated oven at 177°C (350°F) for about 20 minutes, or until they are golden on top.
