Ingredients
- Eggs : 2
- Mascarpone cheese : 200 grams
- Caster sugar : 80 grams
- Lemons : 3
- Limoncello : 12 centiliters
- Ladyfingers : 18
Preparation steps

First, prepare the ladyfingers by following the steps in the linked recipe. You can also use store-bought ladyfingers.
In the bowl of a stand mixer, whisk the egg yolks with 70 grams of granulated sugar until the mixture doubles in volume. -
Once the mixture has doubled, add the mascarpone and mix again.

Add the juice of two lemons (about 5 centiliters) and mix.
Set aside. -
Beat the egg whites until foamy. When they become frothy, add the remaining 10 grams of sugar and whisk until stiff peaks form.

Gently fold the egg whites into the mascarpone mixture using a spatula.
Set aside. -
In a dish or bowl, mix the limoncello and the juice of the remaining lemon.
Briefly soak the ladyfingers in the mixture. -
Place the soaked ladyfingers at the bottom of the serving dish.

Add a layer of the mascarpone mixture.
Add another layer of ladyfingers and finish with a final layer of mascarpone.
Refrigerate for at least 3 hours.For decoration, add some lemon zest and a few lemon slices.
