Ingredients
- Egg whites : 3
- Caster sugar : 250 grams
- Icing sugar : 30 grams
- Corn starch : 30 grams
- Water : 10 centiliters
- Gelatin (Sheet) : 8
- Honey : 1 tablespoon
- Strawberry aroma : 1 teaspoon
- Food coloring (Red) : 1 pinch
Preparation steps

Start by soaking the gelatine leaves in a bowl of cold water.

In the bowl of your mixer, beat the eggs until stiff.
While waiting for them to rise, prepare a syrup. -
Place the caster sugar, spoonful of honey and water in a saucepan.
Bring to the boil until it reaches 120 degrees Celsius.
At this temperature, remove from heat and add the drained gelatine leaves. -
Pour the syrup over the egg whites.
(They should be frothy but not firm). -
Add the strawberry flavouring and colouring.
Continue beating at high speed until the mixer bowl cools slightly. Approx. 10 minutes. -
Place your frame on a silicone tray. If silicone is not available, use a baking tray with a sheet of greaseproof paper on top.

Pour in your marshmallow and smooth out well.
Leave to air free for at least 12 hours. -
Finally, sprinkle with the "tant-pour-tant" mixture of cornstarch and powdered sugar.
Cut marshmallow strips first, then small cubes.
Sprinkle again on each side.
