As the dough is rich in butter, there’s no need to butter the moulds.
You don’t need a food processor, just a bowl and a whisk.
Ingredients
- Egg yolks : 2
- Flour : 150 grams
- Corn starch : 30 grams
- Unsalted butter : 110 grams
- Caster sugar : 110 grams
- Vanilla sugar : 10 grams
- Baking powder : 6 grams
- Salt : 1 pinch
Preparation steps

Place egg yolks, caster sugar and vanilla sugar in mixer bowl.
Beat until the mixture whitens. -
Add the flour, sifted cornstarch, baking powder and whizz until the mixture sands, i.e. forms small pieces of dough.
Replace the whisk attachment with the leaf and gradually add the butter, cut into small pieces.
Blend until the butter is perfectly incorporated. -
Collect the dough and form into a ball.
Shrink-wrap and refrigerate for one hour. -
Cut out small pieces of dough and place them in the mould indentations.
Bake at 170 degrees Celsius for 20 minutes. - Temperature: 170°C
