Ingredients
Shortbread dough
- Flour : 250 grams
- Unsalted butter : 125 grams
- Caster sugar : 110 grams
- Egg : 1
- Vanilla : 12 grams
Normandy pie
- Elstar apples : 3
- Eggs : 2
- Almond powder : 70 grams
- Caster sugar : 70 grams
- Slivered almonds : 60 grams
- Whipping cream 30% : 15 centiliters
- Vanilla sugar : 12 grams
- Icing sugar : 1 tablespoon
- Calvados : 2 tablespoons
Preparation steps

Make the shortcrust pastry as indicated on the linked recipe.
Line the tart tin, prick with a fork and set aside in the fridge. -
Peel, core and chop apples.
Set aside for later use. -
Place the slivered almonds in a fat-free frying pan.
Heat over medium heat to roast the almonds.
When golden, remove from heat and set aside. -
Place the eggs, caster sugar and vanilla sugar in a bowl.
Whisk briskly until frothy. -
Add the cream and almond powder.
Mix well.
Add the two tablespoons of Calvados and mix again. -
Remove the tart tin from the fridge and place the apple pieces on the tart base.

Pour in the tart mixture and bake for 25 minutes at 170 degrees Celsius fan oven.
Before serving, place the flaked almonds around the edge of the tart and sprinkle with powdered sugar. - Temperature: 170°C
