Ingredients
For the dough
- Flour (T45 or T55) : 350 grams
- Dry baker's yeast : 7 grams
- Milk (Warm) : 180 milliliters
- Oeuf : 1
- Unsalted butter (Melted) : 30 grams
- Caster sugar : 1 tablespoon
- Salt : 1/2 teaspoon
For the filling
- Gouda (Diced or grated for a melty version) : 150 grams
- Pepper : To Taste
For the egg wash
- Egg Yolk : 1
- Milk : 1 tablespoon
- Sesame seeds (Optionnal) : To Taste
Preparation steps

Mix the dry yeast into the warm milk with the sugar.
Let rest for 10 minutes until bubbles form. -
In a large bowl, combine the flour and salt.
Add the egg, the milk/yeast mixture, and the softened butter.
Knead by hand or in a stand mixer for 10 minutes until the dough is soft and slightly elastic.
Cover with a clean towel and let rise in a warm place for 1 hour (until doubled in size). -
Punch down the dough and divide it into 8 equal pieces.
Flatten each piece, place a cube (or a generous spoonful) of gouda in the center, fold the dough over the filling, and shape into a ball.
Place the buns seam-side down on a baking tray lined with parchment paper.
Cover and let rest for 30 minutes. -
Preheat the oven to 180°C (350°F).
Brush the buns with the egg wash. -
Bake for 15 to 20 minutes, until nicely golden brown.
