Home-made tabbouleh

Ingredients
- Semolina : 200 grams
- Water : 260 milliliters
- Olive oil : 4 tablespoons
- Yellow lemon (juice) : 5 tablespoons
- Tomato : 160 grams
- Red bell pepper : 40 grams
- Cucumber : 180 grams
- Shallot : 10 grams
- Mint leaves : 10
- Feuilles de basilic (Leaves) : 5
- Salt : 1 pinch
- Pepper : 1 pinch
Preparation steps

Bring the water to the boil in a saucepan.

Place the semolina in a bowl and pour in the boiling water.
Cover and leave to swell for 4 minutes. -
Add olive oil and mash with a fork.
Leave to cool. -
Peel and cut tomatoes, cucumbers, peppers and shallots into small pieces. Don't forget to core the tomatoes.
Add to the semolina. -
Rinse and chop mint and basil leaves.
Pour in lemon juice. -
Mix well and adjust seasoning with a pinch of salt and a turn of the pepper mill.
Serve chilled.
