Ingredients
- Green Peppercorn (Can) : 30 grams
- Veal stock : 20 centiliters
- Crème fraîche 40% épaisse : 130 grams
- Red wine vinegar : 50 milliliters
- Shallot : 1
- Noisette de beurre : 1 teaspoons
Preparation steps

Peel and finely chop the shallot.
In a saucepan, sauté in a knob of butter. -
Add the drained and rinsed pepper. Do not hesitate to lightly crush the peppercorns.
Fry for 2 minutes. -
Deglaze with red wine and reduce for 2 minutes.

Add the veal stock and reduce for 5 minutes.
