Ingredients
- Potato : 850 grams
- Unsalted butter : 90 grams
- Egg yolks : 2
- Egg : 1
- Salt : 1 pinch
- Pepper : 1 pinch
Preparation steps

Peel and chop the potatoes.
Heat for 30 minutes in a stewpot filled with water. -
When potatoes are soft, drain and mashed potato with a potato masher.
Add the butter. -
Add eggs one at a time, mixing well.
Season with salt and pepper. -
Place the purée in a piping bag with a fluted tip and shape the duchesse potatoes on a sheet of baking parchment or silicone paper.
Bake for 25 minutes at 200 degrees Celsius. - Temperature: 25°C
