- Leek (Minced) : 1
- Black Forest Ham : 90 grams
- Gruyere (Grated) : 125 grams
- Eggs : 2
- 18% cream : 100 milliliters
- Salt : To Taste
- Pepper : To Taste
- Nutmeg (Powder) : 1 pincée
- Olive oil : 2 cuillères à soupe
Preparation steps
Prepare the shortcrust pastry

Prepare the shortcrust pastry and pre-bake it for 10 minutes following the instructions from the recipe above.
Prepare the leeks

Wash and finely slice the leek.
In a pan, sauté the leek in a drizzle of oil or butter over low heat for 8 to 10 minutes, until tender.
Lightly salt, pepper, then let cool slightly.
Prepare the quiche filling

In a bowl, beat the eggs with the cream.
Season with a pinch of salt, pepper, and a little nutmeg.
Assembly and baking

Preheat the oven to 180°C (356°F).
Line a tart pan with the pastry. Prick the base with a fork.
Spread the cooked leek, ham, then grated cheese.
Pour the egg-cream mixture over the filling.
Bake for 35 to 40 minutes, until the top is nicely golden.
