Ingredients
- Turkey Fillets : 4
- White ham (slices) : 4
- Emmental Cheese (grated) : 4 tablespoons
- Pesto rosso : 4 tablespoons
- Flour : 4 tablespoons
- Breadcrumbs : 4 tablespoons
- Egg : 1
- Unsalted butter : 1 pinch
- Olive oil : 1 pinch
- Salt : 1 pinch
- Pepper : 1 pinch
Preparation steps
- 
                                    Place turkey fillets on a board and flatten with a rolling pin. 
 Season with a pinch of salt and a twist of the pepper mill.

                                    Place a slice of ham on each fillet. 
 Be sure to leave a margin so that you can close the cordons bleu tightly once they've been garnished.
- 
                                    Spread a tablespoon of Pesto Rosso on each slice of ham. 
- 
                                    Then add the equivalent of a tablespoon of grated Emmental cheese. 
- 
                                    Finally, close the fillets in half, insisting on the sides to "glue" them together. 
- 
                                    Place the flour in a shallow dish, the breadcrumbs in a second and the beaten egg in a third. 
- 
                                    Start by dipping the cords in flour, then in beaten egg. 
- 
                                    Finish with the breadcrumbs. 
 In a hot frying pan, drizzle with olive oil and add a knob of butter.
 Brown the cords bleu for a good five minutes on each side over medium heat.
