Ingredients
- Raspberries : 600 grams
- Caster sugar : 100 grams
- Yellow lemon (Juice) : 1
- Egg White : 1
Preparation steps

In a saucepan, heat the raspberries with the sugar and lemon juice over medium heat for about 20 minutes.

Blend everything to extract as much juice as possible. Strain through a fine mesh sieve and refrigerate for 3 to 4 hours until the juice is very cold.

Whisk an egg white until stiff peaks form and fold it into the mixture.

Place in the ice cream maker for 25 minutes.
Using a spatula, transfer the sorbet into a container and keep in the freezer for at least 2 hours before serving.
