Ingredients
- Flour : 180 grams
- Honey : 180 grams
- Unsalted butter : 30 grams
- Milk : 10 centiliters
- Cardamom seeds : 3
- Clove : 3
- Star anise or badian : 1
- Baking powder : 11 grams
- Cinnamon : 1/2 teaspoon
Preparation steps

Place the milk in a saucepan.
Add the star anise, cardamom seeds and cloves.
Heat to a gentle simmer, allowing the spices to infuse for ten minutes. -
While the milk is heating, place the honey and butter in another saucepan.
Heat over low heat until the butter has melted and the honey has liquefied. -
Mix the milk with the honey/butter mixture.

Place the flour, baking powder and cinnamon in a bowl.
Mix well.
Gradually add the milk and mix well with a whisk. -
Butter the cake tin and pour in the gingerbread mixture.
Place in the oven at 160 degrees Celsius for 35 minutes at fan-assisted heat. - Temperature: 160°C
