Preparation steps

Step 1
Preheat the oven to 204°C (400°F).
Melt the butter in a skillet over medium heat.
Add the diced apples, cane sugar, vanilla sugar, and cinnamon. Stir well to coat the apples.
Cook over medium heat for 10 minutes, stirring occasionally.
After 10 minutes, add the Calvados and continue cooking for another 5 minutes until the apples are tender and caramelized. Remove from heat.
Step 2
Line a pie dish with one of the puff pastry sheets, pressing it gently to fit against the edges of the dish.
Pour the cooked apples into the pastry-lined dish.
Step 3
Cover with the second puff pastry sheet. Press the edges together to seal, then roll the edges for a secure closure.
Using a sharp knife, cut designs or create a face shape on the top pastry (for example, a Halloween theme or a custom design).
Step 4
In a small bowl, mix the egg yolk with the maple syrup.
Brush the surface of the pastry with this mixture to give it a shiny, sweet glaze during baking.
Place the pie in the preheated oven and bake for 25 minutes, or until the pastry is golden and crispy.
Keep an eye on the pie toward the end to prevent burning.
Remove the pie from the oven and let it cool slightly before serving.
