Green Peppercorn (Can) : 30 grams
Veal stock : 20 centiliters
Crème fraîche 40% épaisse : 130 grams
Red wine vinegar : 50 milliliters
Shallot : 1
Noisette de beurre : 1 teaspoons

Preparation steps

Step 1
Peel and finely chop the shallot.
In a saucepan, sauté in a knob of butter.
