Ingredients
Tuna tataki
- Red thuna : 400 grams
- Sesame seeds : 100 grams
- Olive oil : 50 milliliters
- Yuzu-Soy sauce : 3 tablespoons
- Roasted sesame oil : 1 tablespoon
- Hachi pepper : 1 pinch
Udon noodle wok
- Udon Noodles : 300 grams
- Shiitake mushrooms : 200 grams
- Soy sauce : 4 tablespoons
- Olive oil : 3 tablespoons
- Carrots : 2
- Onion : 1
- Bouquet de coriandre (bunch) : 1
Preparation steps
Marinade

To make the marinade, combine the olive oil, soy/yuzu sauce, toasted sesame oil and pepper in a high-sided dish.
Mix well. -
Cut the tuna into 4 equal-sized pieces and brush with the marinade.
Cover with film and refrigerate for one hour.
Udon noodle wok

In a pot of boiling water, cook the noodles for 6 minutes without adding salt to the cooking water.
(The soy sauce is already very salty, so there's no need to add more). -
While the noodles are cooking, place the olive oil in the wok and sauté the sliced carrots and onion.

After 3-4 minutes, add the sliced mushrooms.

Fry for 2 to 3 minutes, then add the well-drained noodles.

Finally, add the soy sauce and chopped coriander and leave on a low heat while you snack the tuna.
Tuna tataki

When the hour has passed, sprinkle each tuna steak with sesame seeds.

In a hot frying pan, drizzle olive oil over the tuna pieces.
Cook for a minute on each side.
Depending on the thickness of the tuna steaks, this time may vary. -
Finally, cut thin slices from each piece of tuna and place on a plate, accompanied by the Udon noodles.
