Ingredients
- Egg whites : 3
- Icing sugar : 100 grams
- Almond powder : 60 grams
- Flour : 30 grams
- Unsalted butter : 90 grams
- Banana (Ripe) : 1
- Dark chocolate (70%) (Chips) : 50 grams
- Vanilla Extract : 1/2 teaspoon
- Amber rum : 1 teaspoon
Preparation steps

Preheat the oven to 180°C (356°F).
Melt the butter until it turns a nutty brown color, then let it cool slightly.
Mash the banana with a fork until you get a smooth purée. -
In a mixing bowl, combine the powdered sugar, almond flour, and all-purpose flour.

Add the unbeaten egg whites, the banana purée, the vanilla (and the rum or zest if used), then fold in the melted butter.
Add the chocolate chips. -
Divide the batter into greased financier or muffin molds.
Bake for 15 minutes until the tops are golden and the centers are soft. - Temperature: 180°C
