Ingredients
- Water : 25 centiliters
- Caster sugar : 65 grams
- Amber Rum : 3 tablespoon
- Pineapple : 1/2
- Star anise or badian : 1
- Cardamom (Seeds) : 3
- Vanilla bean gousse : 1
Preparation steps
Flavored syrup

Start by making the syrup in which the pineapple will be immersed. This step should be carried out at least 3 hours beforehand, to allow the pineapple to absorb the flavours of the syrup. Ideally, this step should be carried out the day before.
Place the water, sugar and spices in a saucepan (for the vanilla pod, cut it in half and remove the seeds, placing them in the syrup along with the pod).
Bring to the boil and boil for 3 minutes. -
Stop cooking and add rum.

When the syrup has cooled, add the roughly chopped pineapple pieces.
Be sure to remove the pineapple's eyes and core.
Set aside in a cool place.
Soft cake

Place the eggs, caster sugar and vanilla sugar in a bowl and whisk briskly until frothy.

Add flour, cornstarch and baking powder.
Mix again. -
Finally, add the milk. The dough should be smooth and homogenous

Drain the pineapple pieces and place them in the moulds.

Add the dough, but do not fill the cavities to the top. Leave a space of about 1 cm.
Bake at 170 degrees Celsius for 20 minutes. - Temperature: 170°C
