Egg yolks : 2
Milk : 250 milliliters
Caster sugar : 25 grams
Unsalted butter : 15 grams
Vanilla sugar : 12 grams
Flour : 20 grams
Poudre d'amandes : 2 tablespoons
Vanilla bean : 1 pinch

Preparation steps

Crème pâtissière

Step 1
Bring the milk to the boil in a saucepan.

In a bowl, whisk together the sugar, vanilla sugar and vanilla powder.
Add flour and mix again.

Gradually pour in the milk, mixing well.
Step 4
Return to the heat and whisk until the cream thickens.
When it begins to boil, remove from heat and add almond powder and butter.
Set aside.

Tarte

Step 5
Place the puff pastry in a tart tin and prick with a fork.

Spread the pastry cream over the base.
Step 7
Then place the peach pieces, washed and sliced beforehand.
Sprinkle with cane sugar and bake at 180 degrees Celsius for 25 minutes.
Leave to cool before serving.
