Ingredients
- Egg yolks : 2
- Milk : 250 milliliters
- Caster sugar : 25 grams
- Unsalted butter : 15 grams
- Vanilla sugar : 12 grams
- Flour : 20 grams
- Poudre d'amandes : 2 tablespoons
- Vanilla bean : 1 pinch
Preparation steps
Crème pâtissière

Bring the milk to the boil in a saucepan.

In a bowl, whisk together the sugar, vanilla sugar and vanilla powder.
Add flour and mix again. -
Gradually pour in the milk, mixing well.

Return to the heat and whisk until the cream thickens.
When it begins to boil, remove from heat and add almond powder and butter.
Set aside.
Tarte

Place the puff pastry in a tart tin and prick with a fork.

Spread the pastry cream over the base.

Then place the peach pieces, washed and sliced beforehand.
Sprinkle with cane sugar and bake at 180 degrees Celsius for 25 minutes.
