Ingredients
Chocolate topping
- Dark baking chocolate (60%) : 120 grams
- Unsalted butter : 110 grams
- Caster sugar : 100 grams
- Almond powder : 100 grams
- Eggs : 2
Roasted pears
- "Conference" pears (Approx. 3 pears) : 300 grams
- Vanilla sugar : 1 tablespoon
- Unsalted butter : 10 grams
- Vanilla seeds in powder : 1 pinch
Assembling
- Puff pastries : 2
- Egg Yolk : 1
Preparation steps
Chocolate topping

Melt the chocolate in a bain-marie.

Place the butter, cut into pieces and at room temperature, in the mixer bowl.

Add the powdered sugar and mix using the beater attachment.

Mix, then add the first egg.

Then the second.
-
Add the almond powder and mix well.

Finally, pour in the melted chocolate and mix well.
Set aside.
Roasted pears

Peel and cut the pears into pieces (about 300 grams of flesh).
Place in a frying pan with the vanilla sugar, vanilla seeds and chopped butter. -
Fry for about 10 minutes, until the pear pieces are well roasted.
Set aside.
Assembling

Unroll the first puff pastry and prick it with a fork.

Roll out the chocolate filling, making sure to leave a 1-centimeter border around the edge of the pastry.

Place the pear pieces on top of the galette.
Don't forget to place the bean! -
Lightly moisten the pastry edges with a brush and a little water, and place the second puff pastry on top.

Pinch the edge and fold over to seal the two pastry pieces.
Using the tip of a knife, create the pattern of your choice.
Mix the egg and brush over the galette.
Place in the fridge for one hour. -
After an hour, add a second layer of egg to obtain a nice color when cooked.

Bake for 25 minutes at 200 degrees Celsius.
