Ingredients
- Caster sugar : 170 grams
- Unsalted butter : 100 grams
- Whipping cream 30% : 20 centiliters
- Fleur de sel : 1 pinch
- Water : 1
Preparation steps

Place the sugar in a saucepan.

Add cold water to wet all the sugar.
Bring to the boil. -
Meanwhile, heat the cream in a saucepan, without boiling it.
(This will avoid too much thermal shock and limit splashing when adding it to the caramel).
Leave over medium heat. -
Be careful not to burn your caramel: once it starts to smell, you need to keep a close eye on it!

When it has turned a lovely dark golden color, remove the caramel from the heat.

Slowly add the cream, mixing well.
Watch out for splashes! -
Return to a low heat until the caramel is smooth.

When the cream is well incorporated, add the chopped butter.

Finally, once the butter has melted, add the fleur de sel and mix.
Allow to cool to final consistency.
