Milk : 1 liter
Dark chocolate (70%) : 250 grams
Corn starch : 4 tablespoons
Unsalted butter : 30 grams

For this recipe we used a pastry chocolate with 70% chocolate.

Preparation steps

Step 1
In a bowl, dissolve cornstarch (Maïzena) in 250 ml milk.
Set aside

In a saucepan over low heat, melt the chocolate in 750 ml of milk, stirring with a whisk.
When the chocolate has melted, add the milk and cornstarch mixture and continue stirring.
Add the butter and stir again until the mixture thickens (starts to boil).
Step 3
Pour into small pots or ramekins.
Leave to cool.
